Vancouver just got hit by the biggest winter storm since the year I was born, so I’ve been cooped up indoors over Christmastime while the snow piles higher and higher outside the window. Invariably my feet have led me to the kitchen, craving comfort food. Something hearty that will warm the cockles of your heart. If it’s a simple, yet rich meal you’re after, look no further!
French Onion Soup
This simple fare combines the sweetness of caramelized onions and the hearty taste of beef stock and dry white wine. But don’t be fooled by the short list of ingredients, for French Onion Soup is truly a labour of love that will keep you stovetop-bound.
Spaghetti a Limone
Isn’t a creamy pasta dish just the epitome of comfort food? This surprisingly simple dish elevates it to a whole new level, and even though I’m still trying to convince my family that cream and citrus don’t curdle, for now it’s just a personal favourite.
Cheese Fondue
This Swiss delicacy is a family tradition. A bubbling pot of gruyère and emmental—it brings the whole table together where we break bread and make merry. Typically served with charcuterie, cornichons and boiled potatoes, but it’s just as good with a classic French baguette. We’ve even got another tradition, taken straight from the French cartoon Asterix in Switzerland. The first person to drop a piece of bread in the pot gets a stick. The second gets a whip, and the third goes into the lake with chains.
